Craftsmanship & finish

The blade runs full tang the length of the handle, which is what gives a knife like this its balance and lets it be resharpened rather than replaced. It’s finished satin rather than mirror-polished. A duller sheen that shows fingerprints and fine scratches less over years at the table.

The olive wood handle is triple riveted, the traditional fixing on a knife meant for daily use rather than display. And because it’s a natural wood rather than a moulded material, the grain on each handle varies. So no two knives in a set look quite identical.

The estate

Claude Dozorme was founded in 1902 by Blaise Dozorme in Thiers, in France’s Auvergne region. A town that has been the country’s cutlery-making centre for roughly five centuries. His grandson, also named Claude Dozorme, took over the business and expanded its range from the 1970s onward.

How to use it

  • Wash each knife by hand straight after use and dry it immediately with a soft cloth.
  • Neither the satin-finished blade nor the olive wood handle is dishwasher safe.
